Cocktail Popsicle: Watermelon Mojito Popsicles

Watermelon Mojito Popsicles ~ Get your Mojito fix in a Popsicle. Yep, now you can cool down with one of your favorite drinks and never worry about getting your glass mixed up with someone else’s drink. Really, have you ever laid down a Popsicle like a drink? Didn’t think so.

And yay, to finally getting a cocktail Popsicle up on a Wednesday. Seriously, I started the Wednesday Cocktail Popsicle Series three weeks ago with this post here and this is my first, on-time post – eek!

More breaking news about this series; I’m moving it over to my other blog family, Endless Simmer, where it will be keyboarded under Poptails. And, yes-of course, I will continue to cross post here.

This is a bit of a non sequitur but I wanted clear this up for a reader who left me a bad email address, so I couldn’t respond to it otherwise…

Yes, I do write the posts myself over at Endless Simmer. I am a contributor over there and write under the handle Sweet Fiend. The question came up because it was mentioned that the writing seem to be so different from here to there. Is it, really? Dunno if that’s good or bad.

What I do know is that these Watermelon Mojito Popsicles are killer. Hit the jump for my post and recipe write-up.
