My boys don’t always love breakfast, but when it tastes like this and looks like a dessert, they are all in. Yay to that! Lucky for me most of the work is done the night before and all I need to do is assemble it in morning. To make things even easier, each Dole Fridge Pack has a resealable top, so nothing goes to waste. I can use as little or as much as I need.
Although most times, my boys end up eating what’s left in the container. I’m pretty sure if left to their own devices, both would be fruitarians. Tropical Breakfast Parfait
Ingredients
- Chia Pudding
- ½ cup chia seeds
- 1 ½ cup almond milk
- ½ cup coconut milk
- ½ cup juice from any Dole Fridge Pack
- 1 teaspoon vanilla extract
- Overnight oats
- 1 cup old-fashion oatmeal
- 1 cup almond milk
- 1/2 cup coconut milk
- ½ cup juice from any Dole Fridge Pack
- 1 teaspoon cinnamon
- 1 Dole Fridge Pack Mandarin Oranges – 6 to 10 wedges, or add to taste
- 1 Dole Fridge Pack Peaches – Add 4 to 6 slices, or add to taste
- 1 Dole Fridge Pack Pineapples – Add 6 to 10 pieces, or add to taste
- 1 pint raspberries
- 1 cup granola
Instructions
To make the chia pudding: Add all ingredients to a bowl and whisk until well combined. Transfer to the fridge to soak overnight.
To make overnight oats: Add all ingredients to a bowl and whisk until well combined. Transfer to the fridge to soak overnight.
To assemble: Evenly divide and layer two glasses or bowls with chia pudding, Dole Fridge Pack Mandarin Oranges, raspberries, overnight oats, granola and Dole Fridge Pack Peaches and Dole Fridge Pack Pineapples. You can add more or less of the Dole Fridge Pack fruit to taste and can conveniently save the leftovers for later use!
