S’Mores Cookies on a Stick – how cute and fun are these? My little guys loved these and loved making them for our latest HERSHEY’S #HelloHappy Moment(s).
As many of you know, I’ve partnered up with HERSHEY’S to share a few #HelloHappy Moment(s). Moments like the pudding parfaits from here and the sheet cake here. The idea behind #HelloHappy is to choose happiness anywhere and at any time during the hustle and bustle of life’s little moments.
For us, this latest #HelloHappy moment is two-fold. We are celebrating summer break and Summer Solstice.
Things are finally slowing to a less frenetic, and less dramatic pace! Dramatic? Yup, you would be amazed how even little boys have their own little set of drama at school—things like, “Can you believe so-and-so chose so-and-so before me for his basketball team. I mean, Mom, I shot 10 points that last game the last one was basically a buzzer beater.”
But now that we are easing into summer, I’m thankful we can put the snooze button on all of the drama and the mad rush of school for a few good weeks. We are moving on to fun projects and more together time at home.
My little guy Cole is an avid Chopped watcher, so he loves getting into the kitchen with me and Matt. To celebrate Summer Solstice, we decided to bring the outdoors indoors with these S’Mores Cookies on a Stick. Of course you can skip the stick, but it really makes this cookie recipe that much more fun – to go hunt and gather sticks with your little ones.
Aside from that, it’s a great way to get your kids outdoors for a little hike that lasts longer than thirty minutes. Even the baby got into the act by pointing to his chosen sticks and saying, “this, this, this . . .”
Armed with our sticks (cleaned of course!), HERSHEY’S chocolate bars and some mini marshmallows, we got into the kitchen to get things started. Cole being the chef-in-training, always likes to take on the task of measuring and mixing, while the baby provides laughter as he darts in and out of the kitchen making little squeals.
This is exactly why I love our ‘Hello Happy Moments’. It’s nothing grand or anything that involves heavy planning, it’s just fun little moments like this that carves out special memories.

HERSHEY'S S'mores Cookie on a Stick
Ingredients
- Recipe from Hershey's Kitchen
- 2 ¼ cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. kosher salt
- 2 sticks unsalted butter, at room temperature
- ⅔ cup granulated sugar
- ⅔ cup firmly packed light brown sugar
- 2 large eggs
- 2 tsp. pure vanilla extract
- 6-7 HERSHEY’S Milk Chocolate Bars
- 2 ½ cups mini marshmallows
- 20-30 sticks or small branches
Instructions
Preheat an oven to 350°F. Line 2 baking sheets with parchment paper.
In a bowl, sift together the flour, baking soda and salt. Set aside.
In the bowl of a stand mixer with paddle attachment, beat together the butter and the granulated and brown sugars until the mixture is light in texture, about 3 minutes, scrape sides and bottom of bowl. Beat in the eggs and vanilla, scrape sides and bottom of bowl. Reduce the speed to low and gradually add the flour mixture, beating just until smooth and stopping to scrape down the bowl as needed.
Place a cleaned stick on parchment lined cookie sheet, drop rounded tablespoonful of the dough onto one end of the stick, spacing them about 1 inch apart. Bake cookies for 5-6 minutes. Remove bake sheet and sprinkle top of each cookie 2-3 HERSHEY’S Milk Chocolate Bar squares and mini marshmallows. Return baking sheet to oven and bake for remaining 5-6 minutes or until cookies are lightly browned.
Let cool for 3 minutes on the baking sheets, then transfer to wire racks to cool slightly before serving.
