Salted Peanut No-Bake Cheesecake

High baking season has started and I tend to get a little crazy with it. While I love it, Matt hates the process but loves the treats that come from it. Running an oven nearly 24/7 from now until January turns our little place into a 2 month long sauna session. For that reason I’m easing into it with this no-bake recipe.

    Okay, your mini cheesecakes always look amazing! I have a mini cheesecake pan, but they don’t come out looking so clean. Ya know, the edges – like yours. How do you do it? Do you cut with a biscuit cutter after you bake?!

    Hi Kym,

    To get the smooth sides use an offset spatula and run it along perimeter like you would frosting a cake.

    My roommates actually love it when I have the oven on because it warms up our apartment beautifully! I really like the idea of a salted peanut cheesecake…totally my kind of dessert.
