Rock Candy Jello Shooters with Midori Melon Sour ~ Put the kids to bed and have some fun with these Jell-O shots made into Rock Candy and spiked up with some Midori Sour Melon.

Rock-Candy-Jello-Shooter with Midori Melon Sour

Remember how much you loved those rock candies on a wood stick when you were a kid? Well here it is reinvented as a  Jello shooter.  Can you tell I’m on a Jello shooter run?  This really has Matt scratching his head since I’ve never shown a propensity towards alcohol.

I don’t have one. But many of you know I love how alcohol can enhance baked goods.  Although this is not really baking, it comes close-right?

Besides my football watching friends love my Jello shooters, so they challenged me to another round of creativity. Never one to waffle from a challenge, I racked my brain for something fun and original. Bingo! I love this one.

Here’s my latest cocktail and Jell-O mash-up creation, Rock Candy Jello Shooters on a Stick. Let me know what you think? Love it hate it?

A few notes:

  • This is an easy recipe, but it does take some time. My suggestion complete step one  a day ahead, as you need to make the jigglers and dice  it.
  • For a non-alcoholic version that is kid friendly, replace the alcohol portion with 4 ounces of flat Sprite.
  • The Knox gelatin mix works as the glue to hold the diced Jello together. That said, make sure when your are completing step 4 in the recipe  you pour the gelatin just enough to bind the Jello pieces together and not to the point of submersion. Depending on the pan you use, you may have left  over gelatin mix.
  • Other Jello shooters you may like: Lemon Drop Wedges and Strawberry Margaritas.

Rock Candy Jello Shooters with Midori Melon Sour

Yields 12 Pops

Ingredients:

Jello:

  • 1 large packet Lime Jell-o

Gelatin Mix:

  • 2 packets of Knox plain gelatin
  • 1 ½ cups water boiling water
  • 3 oz. whiskey sour
  • 3 oz .Midori Melon Liqueur
  • 1 tablespoon sugar

Instructions:

Jello:

  1. Lightly cover 8×8 pan with bake spray. Follow instructions on the Jell-O box to make jigglers. To remove finished jigglers from pan run knife along edge of pan and then set pan in warm water for five minutes. Release jiggler from pan and dice. Place diced jiggler in an 8×4 bread loaf pan lightly covered with bake spray. Return to refrigerate overnight.

Gelatin Mix:

  1. In a saucepan boil 11/2 cup water. Transfer boiled water to a heat proof bowl for cooling.
  2. Combine Midori Melon Liqueur and sweet and sour mix in cocktail shaker filled with ice and shake. Pour cocktail mix into a bowl and sprinkle gelatin over it and leave to rest for five. Slowly pour hot water into the cocktail mix and stir until gelatin is completely dissolved, about five minutes. Add in sugar.

Assembly:

  1. Remove chilled pan with diced jiggler from refrigerator. Gently pour final gelatin mix over the diced jiggler until liquid reaches ¾ of the way up. Do not pour to the point of submersion. Return pan to refrigerator for another 4 hours or overnight.
  2. Remove pan and cut into 3x 1/21inch strips, cutting sides in a jagged motion as you do so. Insert Popsicle stick through the middle.

Man, I haven’t had rock candy in FOREVER! And with all of these fun alcohol-infused ideas you should totally start marketing yourself to bartenders. I think these could really make some serious cash at bars!

I love hiding alcohol in knox blocks…there’s so many things you can do with them.

The last time I did that I made mojito’s. Even though I warned everyone that they were like having a shot in each block, no one seemed to get it until they stood up.

im just wondering….on the large box of jello the instructions for the jigglers calls for 2 boxes of gelatin mixes…but your instructions calls for just 1 box…did you use 1 small box? or did you use on large box and just half the jigglers recipe?

    Hi Kristine,

I used on large box and halved the jiggler recipe.
