I’m joining the ranks of those who meal kit. Meal kits are for the the smart-minded, time-strapped, and health-conscious. Its what adults do, they choose efficiency over chaos, homemade over takeout–at least that’s what I gathered from all the meal kit reviews I read online. So of course I joined the herd.
But after a few trial periods with a handful of companies, I was disappointed and cancelled my subscription. Mainly because they were overly labor intensive, which ultimately seemed to be in contrast to what I needed from a meal kit.
I needed a meal kit that could cut through the busy-life factor. One that doesn’t involve too much prep or too many techniques. And if it happens to be organic—BONUS! If it happens to be something my 10-year-old, Cole, can also pull off with some assistance from me—I’m ALL IN!
Enter One Potato, a meal kit for people like me: minimal work, maximum pay off. And thank GAWD that Cole loves to be in the kitchen. I have Geoffrey Zakarian to thank for that (nevermind that both his parents are food bloggers – ???). Tuesday’s have gone from blah to awesome, because that’s when we get our meal kit. It’s a little like Christmas getting that refrigerated box of fresh ingredients.
It is by far, my favorite meal-kit service for its creative simplicity. Most importantly the ingredients are organic and everything comes pre-chopped and pre-measured, allowing for each meal to be ready in 30 minutes or less. A big hooray to that and gaining back some much needed time every evening and to this Black Bean Soup and Quesadilla meal that my family loved!

This one sounds awesome. I totally know what you mean with some of the others. They honestly leave you MORE stressed in the kitchen with all their prep and directions than if you just cooked dinner yourself. Will have to check this one out!

I’ve heard such great things about One Potato and see Catherine making these all the time for her family. . I already cook a great deal BUT always could use some meal kit inspiration and I love these for when I’m traveling for my mom or my husband to try!!! Thank you!!!

I love that these meals are organic and it must be SO nice to have a break from full cooking- I would love to try a great meal that was easy to put together!

Oh I love meals like this, heard so much about One Potato . This is so convenient for days when we are looking for healthier options but don’t want to cook much.
