I’m trying not to write about the heat, because really how boring and mundane. But dang it’s hot and if your basting in your own sweat, then the last thing you want to do is turn on an oven. So hey, thank goodness for easy elegance by way of a chocolate chip cookie trifle, kicked up with some silky smooth chocolate and peanut butter pudding.
I made these for Jenny’s virtual baby shower. She is expecting her third baby and a bunch of us bloggers are joining in the celebration coordinated by Marla. Now I’m assuming you have all been to both these lovely blog – great food and great pictures. I’m a regular reader of both blogs and have been fortunate to meet them both. They are as as sweet in person as they are on their blog.
I’m so relieved to have been able to come up with some thing that I think Jenny would enjoy. I know she is a huge peanut butter fan. But I was left with that—peanut butter, no further idea, no inspiration.
As of late with all that has been going on and the pressure of the book deadline, I’ve been lacking some creativity and busting out baked goods for the blog has been trying—as evident by the spotty postings the last few weeks. But then a happy occurence sent me right into a maniac state of inspiration. You know the kind of state that rushes ideas at you like a relentless ball machine.
While its great to have ideas flooding me, the only problem with it is staying focus. So to keep my brain in sync with my hands, I calmed myself with music while baking and photographing. Thank you happy occurence and The Cure (total flashback) for the inspiration behind this post. Lets just ignore that last line as being a little random. Okay? Awesome. Thanks for the pass.

Chocolate and Peanut Butter Chocolate Chip Cookie Trifles
Ingredients
- 1 cup of chopped chooclate chip cookies (set aside for assembly)
Chocolate Pudding
- 1/3 cup cornstarch
- ½ cup granulated sugar
- Pinch of salt
- 3 cups cold whole milk
- 3/4 cups dark chocolate, chopped
- 1 tablespoon vanilla extract
Peanut Butter Pudding
- 1/3 cup cornstarch
- ½ cup granulated sugar
- Pinch of salt
- 3 cups cold whole milk
- 1/2 cup peanut butter
- 1 tablespoon vanilla extract
Instructions
Chocolate Pudding
- Combine cornstarch, sugar, salt and milk in a blender or food processor and pulse until well blended. Alternatively, combine all ingredients in a bowl and whisk vigorously. Transfer mixture to a heat proof bowl and place over (not on) simmering water for approximately 15-20 minutes, stirring occasionally. Pudding is ready when mixture coats the back of the spoon. Add chocolate or preferred flavor and stir to combine. Add vanilla and stir to combine.
Peanut Butter Pudding
- Combine cornstarch, sugar, salt and milk in a blender or food processor and pulse until well blended. Alternatively, combine all ingredients in a bowl and whisk vigorously. Transfer mixture to a heat proof bowl and place over (not on) simmering water for approximately 15-20 minutes, stirring occasionally. Pudding is ready when mixture coats the back of the spoon. Add peanut butter or preferred flavor and stir to combine. Add vanilla and stir to combine.
Assembly
- Fill to pastry bags with one pudding in each fitted with a round tip.
- Pipe chocolate layer of pudding. Sprinkle chopped chocolate chip cookies on top. Pipe peanut butter pudding layer on top.
- Repeat step two untill trifle bowls or glasses are filled.
Notes
A few notes:

- Pudding is highly adaptable, so change out the chocolate portion to your flavor preference, i.e. peanut butter, Nutella, salted caramel, butterscotch, any fruit flavors by adding fruit puree, etc. Keep in mind you may have to adjust to the amount slightly for flavor and consistency.
- Don’t skimp the sieve portion. No matter how much you whisk a few cornstarch pellets will form and leave a lumpy texture if left unstrained.
- To store place plastic wrap directly on the surface to prevent a skin from forming-that is unless you like it, in which case just cover at the container’s edge and refrigerate.
- For chocolate chip cookie portion I used bakery cookies to save time.

Luckily, we have a small house and overhead fans. It’s finalllyyy starting to cool off enough at night that the afternoons are pleasant in the house. Just don’t turn the oven on. #3.
